Pancake Muffins

With our busy lives Breakfast sometimes gets overlooked, but these pancake muffins are the perfect fix, they are an easy on the go breakfast!  They can be served warm and right out of the oven, or made ahead and quickly reheated or cold.  You can make them just like you would any of your other favorite pancakes by adding in cinnamon and sugar, strawberries, chocolate chips, bananas, blueberries, maple bacon, and more. The options are endless when it comes to these pancake muffins!  I preheat my Dacor oven and set up my kitchen aid stand mixer and get to work.  Combine all the dry ingredients and mix on low speed, then add the wet ingredients and continue to mix until combined.  Fill the muffin tins with the pancake batter about 2/3 of the way full and add any of the yummy add ins you desire.  I place them in the oven to bake and just wait until they are done.  I took them out of the oven and served them warm, some love them plain others like to eat them with some maple syrup or powdered sugar; whichever way you decide they are absolutely delicious and very convenient.
