Skinny Mini Banana Bread Muffins

Last week someone at work had bought a few bananas, when I walked in on Monday morning I had noticed they had not been touched.  Someone was about to throw them away because they were brown and mushy but I stopped them just in time!  Overly ripe bananas make the best banana bread, so I decided id make skinny mini banana muffins.   Bananas are excellent sources of vitamin B6 and contain moderate amounts of vitamin C, manganese, and dietary fiber. Although Bananas are commonly thought to supply exceptional potassium content, their actual potassium content is relatively low per typical food serving.  So lets get started, I preheat the Thermador wall oven on true convection, prep my mini muffin tins and set them aside while I prepare the batter.  Once you add the dry ingredients to the wet ingredients make sure as to not over mix, then spoon the batter into the mini muffin pans.  Then, into the oven they go and I set the timer on the wall oven for about 15 minutes.   All that’s left to do is clean up and wait so I place everything into the Thermador dishwashers, wipe my table down, and prepare my serving platter.  The sweet banana aroma starts to fill the room, and we are all excited for the muffins to be done.  The timer goes off reminding me to check my muffins, so I do and put them back in for another minute.  These Muffins are super delicious, moist, and healthy which makes them 1000 times better.  Satisfies the sweet tooth and is completely guilt free I could eat these everyday!
