Blueberry Vanilla bread With Lemon Glaze

I absolutely adore the summer, not only because I am a July baby but tons of fruits that I love are in season.   I decided I would make something with blueberries, seeing as they looked so delicious at the supermarket I could not resist! Did I mention they were on sale? Obviously I quickly decided to make blueberry vanilla bread with a light lemony glaze perfect for a hot summer day or any day for that matter.   I return from the supermarket super excited to get started! Right away I pull all my ingredients out and preheat my Electrolux wall oven.  Having a kitchen aid stand mixer really helps the process along; just make sure not to over mix after you have added the flour mixture and milk.   I recommend adding the blueberries and folding them in with a spatula, so you don’t over mix your batter and so that your bread does not turn a purple blue color!  Once you have finished pour the batter into the loaf pan and place it in the preheated oven on the convection bake mode.  Now all that is left to do is clean up and wait while the delicious aroma fills the kitchen!  I place all my utensils and tools that I used in the Electrolux dishwasher set it and close the door.  The cleanup is the easy part but waiting for the finished product, now that is the hardest part of all.

Finally I check my breads with a toothpick, and they are perfect so i grabbed them out of the oven and place them on a wire cooling rack.  Since I had made a larger quantity of this recipe after I allowed them to cool i wrapped two loaves up for the following day and made the glaze for the one I was going to share with my colleagues.  I poured the glaze over the top of the bread and let it drip down the sides. I then Cut it up and watched it disappear in the matter of minutes, Success!

Yours truly,
