Since we are all on a health kick I decided to make these Blueberry Buttermilk bran muffins, I know what you’re thinking, but THESE ARE NOT YOUR GRANDMAS BRAN MUFFINS! With that being said lets get these low fat, low calorie muffins started. I took out all of my ingredients and placed them in my Dacor kitchen, and preheated my Dacor range using the convection bake mode. I mixed it all together and divided the batter into the prepared muffin tin. I find using an ice cream scooper helps keep the size of the muffins consistent, but eyeing it works just as well. I then place the muffin tin into the oven and watch as they bake off. These tender bran muffins are practically bursting with juicy blueberries, and I cannot wait to get my hands on one. I checked to see if they are done using a toothpick, since it came out clean I pull them out of the oven to cool. They’re lovely served warm or cold, you will not be disappointed!
