Soft Glazed Pumpkin Sugar Cookies

Since pumpkin spice latte season is among us, I figured I would load you all up with a ton of pumpkin desserts so you can pick the perfect recipes for thanksgiving or for snack. Not that we need an excuse to make these delicious bite size yummies but it always makes me feel less guilty, so tea time right? So I turn on my Thermador wall oven, pure convection mode (which is great for multi-rack cooking) at 350 degrees and hit fast preheat. Then grab all the ingredients and prepare the baking sheets by putting parchment down so we have less to clean later. This recipe happens to be really simple, in my stand mixer with paddle attachment I put butter, oil, pumpkin, sugars, vanilla, and eggs together and put it on low speed until they are well combined and smooth. Then slowly add the dry ingredients and mix until combined. Scoop the cookie dough on to the trays and place them in the oven for about 8 minutes. While these perfect pumpkin cookies are baking you can make the glaze!          I check the cookies pull them out of the oven and let them cool for a few minutes before spreading the glaze over them. Since my crew doesn’t like to wait very long after smelling the pumpkin spice aroma around the kitchen I served the cookies warm with runny glaze however if given a few hours the glaze will harden! Either way the soft pumpkin cookies are delectable!
