Garlic Parmesan Roasted Broccoli & Cauliflower

It seems like we are always looking for healthy and delicious side dishes that can be thrown together with little effort and clean up, and sometimes going back to the basics is a great place to start.   This garlic Parmesan roasted broccoli and cauliflower recipe is just that, simple yet delicious.  I first preheated my Electrolux slide in range to 425 degrees on convection bake, I then prepped my veggies put them in a big bowl a tossed them with olive oil, garlic, salt and pepper.  I then placed a sheet of parchment paper onto a sheet pan and spread the broccoli and cauliflower in a single layer.   Once my oven was preheated I let it bake for 15 minutes, then switched the mode to broil for a minute or two.  Always when you use broil the closer your food is to the broiling element the more intense the sear will be.  Make sure it is not to close and always keep an eye on the food because it doesn’t need much time under the broiler.  However if you like burnt broccoli then leave it under the broiler a little longer.  I then take the sheet pan out sprinkle a little shredded parmesan and am ready to serve.  Weather you clean up before you eat or after, there is minimal mess to worry about, I simply just load the bowl I tossed the veggies in into the dishwasher and throw away the parchment paper that I used to line the sheet pan with.  I hope you enjoy this as much as we did!
