Chicken Burgers and Tzatziki sauce

Have I told you guys I am a big fan of red knobs? Since I’ve become a bit more comfortable in the showroom I decided to jump in on the red knob revolution, which we all know as subzero wolf. I was so excited to be cooking in the subzero wolf kitchen, that I threw on my black and RED chef coat, yes I know I’m pretty dorky! Anyway I love Greek food, so today I decided I would make a Greek style chicken burger and tzatziki sauce. We are going for a healthy lunch so I decided I’d throw some stuff together and see how it comes out. I prepped my chicken burgers, weighed them out on a digital scale to make sure everyone was going to get the same size burger. I then rolled them and flattened them into patties and placed them on a tray with parchment paper in between. I wrapped them up with saran wrap and placed in the subzero refrigerator overnight. Sub zero refrigerators keep your foods fresher for longer, which is why I was able to use the cucumbers that had been in there for the past week to throw together my tzatziki sauce. I peeled and cut the cucumbers then put them in a colander with kosher salt to draw the water out, I let that sit for about half an hour, in the mean time I loaded up the ASKO dishwasher and cleaned my work area. I then threw all the ingredients into the wolf gourmet blender and pulsed till combined (if you don’t have a wolf gourmet blender you can absolutely use a food processor) I then stirred the mixture into the yogurt and seasoned with salt and pepper to taste, wrapped it up and refrigerated it along with the burgers. The next day I pulled my chicken burgers out of the subzero and got to work, I first lightly greased the griddle in the wolf 48 inch gas range, and heated it up to 400 degrees, while I was waiting I got excited and decided why not use the grill as well since its also in the range side by side with the griddle to see which way my coworkers like there burgers better! I have to say both cooking styles resulted in a delicious juicy burger the griddle took a bit longer than the grill so for those who were starving grabbed the grilled burgers! I was just so ecstatic that my chicken burgers were a success and everyone was raving about them! I cleaned my grill and griddle and was completely satisfied with how lunch turned out, there was not a single burger left or even a spoonful of tzatziki left in the bowl, now that is what im talking about!
